A huge must-try: Here you can get a very special croissant in Aalborg

by Simone Springborg

Back in February, we announced that a brand new bakery would soon open in Aalborg’s Vestby.

More specifically, Grøn Bakery & Café on Bådehavnsvej 13, which had its first opening day on March 1, 2025.

And now – just over a month later – it’s safe to say that the bakery has taken the city by storm. They’ve certainly made a mark and have truly become a little oasis for bread- and pastry-hungry Aalborg residents.

Since its opening, they’ve kept their finger on the pulse when it comes to bread and cakes, and almost every week, new and exciting creations pop up in their lavish cake display cases.

However, there is one particular pastry that really caught our attention the first time they shared it on their Instagram.

Namely, a standing filled croissant with both pistachio cream and white chocolate – Oh. my. god!

If you’ve been following popular bakeries in Copenhagen during the fastelavnsbolle season, you’ll probably recognize the iconic round and upright croissant shape.

It has definitely impressed with its iconic exterior and juicy interior. And now, Grøn has also created a beautiful version in the same style.

How did it taste?

There is no doubt that this pastry deserves top marks when it comes to its visual appeal.

The cake stands sharp and beautifully in all its round glory. It is also dipped in chocolate, sprinkled with pistachio nuts, and topped with a small strawberry.

However, the real challenge is figuring out how to approach such a pastry. Should it be sliced open? Should it just be tackled with a fork? Or should you simply pick it up, loosen your jaw, and take a big bite?

We went with the big bite. And surprisingly, it worked really well!

If you expect the pastry to be as crispy and juicy on the inside as it looks on the outside, you might be a little disappointed.

The croissant is primarily airy and almost a bit dense inside. The classic butter flavor and the crispy croissant texture were not very present. However, with the very first bite, we broke into a filling that was packed with the most delicious, airy pistachio cream.

The cream’s consistency was incredibly smooth and almost velvety, and the pistachio flavor was perfectly pervasive.

All in all, a truly delicious and, not least, unique pastry that is definitely a must-try if you’re a true dessert enthusiast.

We can’t think of a single place in Aalborg where you can get a creation quite like this, and we believe that’s enough reason to embark on a little pastry adventure in the West End.

The croissant is currently a permanent part of the menu at Grøn Bakery & Café and can be purchased from Tuesday to Sunday for 42 DKK each.

The café is open on weekdays from 06:00 to 17:00 and on weekends from 07:00 to 16:00.
