Hungry for cake?: Here you’ll find Aalborg’s best summer cakes

It’s finally summer, and that calls for some delicious and fresh summer cakes!

There are plenty of options at many of Aalborg’s lovely bakeries, so of course, we’ve gone out and tested a handful of them. And we can already reveal: they do not disappoint.

Here’s an overview:

BreadbyKaerup – Blackcurrant Tart


One of BreadbyKaerup’s summer cake options is their Blackcurrant Tart.
The tart has an almond base baked with fresh blackcurrants. The filling is a blackcurrant mousse, topped with blackcurrant meringue and sprinkled with freeze-dried blackcurrants. A true blackcurrant dream!
The tart has a lovely crisp base with a soft and creamy filling—a combo we really love here at the editorial office.
The meringue is a bit like a marshmallow mousse or a sort of blackcurrant fluff—and that’s definitely a good thing.
All in all, a super tasty summer cake that we highly recommend.
This delight costs 48 DKK.

Lagkagehuset – Passionfruit Slice


At Lagkagehuset, we were served this pale yellow beauty—their Passionfruit Slice.
A vegan and gluten-free cake with a crispy chocolate base made with puffed rice and coconut.
The cake contains no flour, and the passionfruit mousse is made with soy cream—a plant-based cream alternative.
The mousse also has passionfruit purée and lemon, topped with passionfruit jelly and chopped pistachios.
This cake is guaranteed to be for everyone! And if you’re one of those in Northern Jutland who get a little scared by the word “vegan”—fear not.
We can promise you won’t taste the soy cream at all.
The chocolate base is rich and dense, perfectly paired with the light and fresh passionfruit mousse. This passionfruit slice is a really great pick for a delicious summer cake.
And it’s just lovely to look at too—in the prettiest summery color.

Penny Lane – Rhubarb Dream


Penny Lane
is known for their incredibly beautiful and meticulously crafted cakes, and this Rhubarb Dream is no exception.
We can’t think of many things more summery than rhubarb and fresh berries.
This cake consists of a marzipan base with rhubarb mousse. Inside the mousse hides a rhubarb compote surprise, and it’s decorated with fresh summer berries and chopped pistachios.
The base was super tasty—firm and nutty. Even if you’re usually not into marzipan, this cake is still worth trying as the marzipan flavor isn’t as pronounced as in most marzipan bases.
The slightly dense base pairs perfectly with the very airy mousse, and the rhubarb flavor is just fresh and lovely—perfect for summer.
Overall, a very beautiful and summery cake.

Surdejsbageren – Lemon Curd Tart


Surdejsbageren
served us a true summer classic—a Lemon Curd Tart. And one rarely gets disappointed by that.
The tart consists of a shortcrust pastry base filled with delicious lemon curd and topped with meringue. Decorated with pretty cornflowers to make it extra summery.
As we guessed, it did not disappoint.
We think the tart tasted just as a lemon curd tart should:
Perfectly crisp base that isn’t too thick, the right amount of lemon curd (not too little), and plenty of meringue on top.
We’ve said it before, and we’ll say it again: mixing sour and sweet is never a bad idea.
There is a great balance between the ingredients, and it’s a really beautiful yet simple cake.
A light and tasty cake you just can’t get enough of—perfect for the summer heat.
Surdejsbageren’s Lemon Curd Tart costs 49 DKK.

Fru Søgaard – Passion-White


Fru Søgaard served us their stunning “Passion-White” cake bomb.
It consists of a white blondie base with white chocolate mousse, filled with passionfruit broken gel, topped with passionfruit jelly.
A very summery cake that’s both fresh and sweet at the same time.
You can never go wrong with passionfruit, we think. It’s very fresh and a bit tart, which pairs really well with the sweet white mousse.
A truly delicious and rich cake, which you might fear could be too heavy for the summer heat because of the white chocolate mousse.
But that’s not the case—the lightly tart passionfruit makes the cake really fresh and summery.
This is definitely a cake we think everyone should try during the summer.
This treat costs 45 DKK (50 DKK if you want to enjoy it in the café).
