Selling out fast: Here is the city’s most hyped “Fastelavnsbolle”
It is not until Sunday, February 15, that Fastelavn officially takes place in Denmark.
However, the cream bun season follows its own set of rules.
We have barely finished singing “Welcome, New Year of the Lord” before bakeries across the country are ready with custard, cream, and dough in every imaginable variation.
Lagkagehuset is usually among the first to present the year’s selection.
In 2026, the assortment includes both the classic varieties and cream-based ones with flavors such as blackcurrant, custard, rhubarb, raspberry/Sarah Bernhardt, and crème brûlée.
Now the chain is ready to launch this year’s big novelty.
Lagkagehuset is throwing another weapon into the Fastelavnsbolle war in the form of a collaboration with none other than Mr. Baking Show himself, Tobias Hamann.
Until February 15, you can buy his special Tonka & Amarena cream bun at Lagkagehuset – and it is something Aalborg residents are clearly eager for.
When we stopped by Lagkagehuset at Magasin on Monday morning to pick up a couple for a taste test, there were a mere three left in the display case.
“They’re selling incredibly fast, and we can’t keep up at all,” store manager Bettina Sørensen tells MigogAalborg.
This is how it tastes
We were lucky enough to get our hands on a couple, and of course we have tested the new arrival.
Let’s put the sinful cream bun facts on the table.
The bun is built on laminated pastry with nut praline, tonka bean and vanilla cream, amarena cherries, and dark chocolate.
If you know a bit about Tobias Hamann, you also know that he is never afraid to experiment in the kitchen.
A cake is not just a cake when the 2014 winner of The Great Danish Baking Show gets free rein.

That is also very clear in his take on a cream bun.
There is really a lot going on.
When you take a bite, the first thing that meets you is a truly satisfying snap of dark chocolate – points for that.
Next comes a flavor explosion of what feels like a thousand different things.
At first, everything tasted a bit like “honey cake,” then a bit like “rice pudding” (probably due to the combination of vanilla cream and cherries), and then we got some Nutella vibes from the nut praline.
All of that sounds delicious, but we have to admit that there might be a little too much going on for our taste.
The cream bun is by no means mediocre. It tastes very good, and you can clearly tell that effort has gone into it.
The pastry is spot on, and the individual ingredients taste excellent.
But perhaps the volume has been turned juuuust a little too high on… everything.
