Nutella and lemon: Aalborg Bakery ends the season with a banger

Aalborg certainly doesn’t lack fastelavnsboller.
Still, Kim Grøn, the man behind GRØN Bakery, has once again expanded his range, which already included quite a few buns.
This time, he introduces two fresh creations, each heading in very different directions – one diving into the deep, sweet comfort zone, and the other stepping into the light, fresh dessert-bun territory.
Of course, we’ve tasted them ourselves.
Nutella in my belly
One of the creations is a Nutella fastelavnsbolle that doesn’t try to be subtle.
It features a fluffy butter bun, dipped in warm caramel and cocoa sugar, filled with both “borgmestermasse” Nutella and white chocolate mousse – and topped with toasted pecans.
And yes, if you’re a Nutella fan, this one hits the mark.

The white mousse and Nutella combine surprisingly lightly, and the caramel-dipped butter bun even gives a slight hint of brunsviger vibes.

A fresh twist
At the other end of the spectrum is the lemon fastelavnsbolle.
Here, the base is a light and moist sponge cake with blue poppy seeds, coated in white chocolate and filled with lemon curd mousse, before being crowned with torched Italian meringue.
The result is a fastelavnsbolle that feels more like an elegant dessert than a heavy winter treat.
The lemon mousse adds a fresh, tangy contrast to the sweet meringue, and the overall experience is light, airy, and balanced.
