At just 23: Freja opens a new café in Aalborg

There’s a smell of freshly painted walls and wood oil inside at Møllegade 2 in central Aalborg.

For several months, the former Blomster Klang premises have stood empty, but now there is life behind the windows again.

Soon, Café Noer will open its doors.

Behind the café is 23-year-old Freja Berg Noer, who has pursued her dream of creating her very own café.

She originally comes from Thy but moved to Aalborg a couple of years ago.

Despite her young age, she already has many years of experience in the industry.

Since dropping out of high school, she has worked at various restaurants and cafés in the Thy area and most recently in Aalborg.

“When I started working in the hospitality industry, I could just feel that it was what I was passionate about.

I love meeting new people, talking to many different people every day, serving them, and giving them a great experience,” she says.

Since her debut in the industry, she has dreamed of opening her own place one day.

“I’ve always thought I wanted to open something myself. It really means a lot to me that people feel seen when they walk into a place,” she says.

This approach will be central to Café Noer, where the ambition is to create a small, welcoming oasis in the middle of the city.

Found the dream location

For nearly a year, she searched for the right location, but when she stepped through the beautiful Bordeaux-red door at Møllegade 2, she had no doubts.

“I could immediately see where the counter should go and how the tables should be arranged. And the location is fantastic—right in the city center, next to Kronen and Søstrene Grene,” she says.

Over the past few months, she has put countless hours into transforming the space together with family and friends.

The floors have been sanded by hand with a small machine, walls and ceilings have been painted, and much of the interior has been built by herself together with her father and his partner—using leftover wood from a friend of her boyfriend’s flooring project.

The style will be a mix of raw and romantic, and the walls will feature colorful paintings made by her grandmother.

There are still lamps to hang, logos to place on the windows, and many small details to finish, but she is confident it will all be ready.

The café will have space for 12–13 guests indoors and three small tables outside with a total of six seats, where guests can enjoy a glass of wine, an Aperol, or a gin & tonic in the summer.

Vegetarian dishes and great coffee

The menu will focus on simple, high-quality dishes—without meat.

Guests can look forward to sourdough buns, breakfast plates, crispy croissants, open-faced toasts with ingredients like burrata and tomatoes, as well as fresh salads.

There will also be homemade baked goods such as cookies, brownies, and lemon cake, which will rotate regularly.

And of course, good coffee.

“I personally love good coffee. And I think many of us would rather go out for a good cup of coffee several times a week than spend a lot of money at a restaurant once,” Freja says.

That’s why she will serve quality coffee from her barista machine—prepared in all the ways you’d expect from a modern coffee bar.

“I’m still choosing which beans to use. I care a lot about the coffee being good and that the farmers’ conditions and pay are fair,” she explains.

There is still some work to be done before everything is in place.

The plan is for Café Noer to open in early April, and Freja is looking forward to welcoming the people of Aalborg.

“I hope it becomes a place people want to come back to again and again. A place where you can just drop by, have a good chat, and feel at home,” she concludes.
