Gourmet event returns: Fusion brings giant tuna to Aalborg

There is another extraordinary gastronomic experience on its way to Aalborg.

Restaurant Fusion on the city’s waterfront is bringing back its exclusive The Bluefin Experience, where guests can witness the carving of a giant bluefin tuna up close.

The event will take place on Thursday, 17 September 2026, at 6:00 p.m.

Renowned omakase chef Vinh Du will once again host an evening that promises to be unlike any other.

A 150-kilogram tuna carved in front of guests

The evening begins with its biggest highlight.

A whole bluefin tuna weighing around 150 kilograms will be expertly carved in front of the guests before being prepared for the evening’s many courses.

It is a ritual that very few people get the chance to experience up close, where precision, tradition and respect for the ingredient come together.

Guests will then be served a curated 18-course omakase menu.

Throughout the menu, the bluefin tuna will be presented in a variety of refined preparations, each designed to showcase the fish’s unique textures and rich flavours.

The evening begins with elegant snacks and concludes with an exquisite dessert.

An exclusive evening in intimate surroundings

Omakase means that guests leave the menu entirely in the chef’s hands, allowing him to create each course based on his own vision and the finest seasonal ingredients.

As a result, diners embark on a culinary journey where each dish is revealed only as the evening unfolds.

After dinner, guests will have the opportunity to continue the evening in Fusion’s bar, where bartenders will be serving sophisticated cocktails in an intimate and atmospheric setting.

The experience is priced at DKK 1,500 per person, plus a booking fee.

The price includes the signature 18-course omakase menu, one cocktail and one glass of wine. Additional beverages will be available for purchase during the evening.
