Coffee shop overwhelmed: Now they’re introducing an all-new cake concept

Even though we’re at the Main Library, it’s anything but quiet in the basement.

Since The Daily Brew opened just a month ago, locals from Aalborg have been flocking there to get their hands on affordable, high-quality coffee and freshly baked rolls – and the response has been so overwhelming that the owners have now decided to think even bigger.

According to Henrik Bruse, they had hoped to sell around 100 cups of coffee a day – but reality turned out quite different.

Today, they brew more than double that – and have already had to hire ten employees to keep up with demand.

“It was really just supposed to be a small passion project,” says Henrik with a tired smile as he pours another cup of coffee across the counter.

“But we’ve been swamped – in the best possible way.”

And now the next step is clear: starting this month, The Daily Brew is introducing a brand-new cake concept, where part of the selection changes every single month.

A monthly cake rotation

Every month, customers can look forward to three new cakes – a cookie, a loaf-style cake, and a special croissant variation.

It’s Henrik’s way of keeping creativity alive without overwhelming his guests.

“I’ve learned from experience that you shouldn’t change things too often – people need time to come and try them.

So now I stick to a set plan where I can reinvent three items each month,” he explains.

The first three cakes have already arrived in the display case – and it’s clear that the level of ambition hasn’t suffered from the busy start.

Pistachio, pumpkin, and chai

The first newcomer is a white chocolate and pistachio cookie – a dense but soft cookie topped with pistachio cream and sprinkled with crushed pistachios for flavor and crunch.

The combination of nuts and chocolate is classic, but here it’s elevated to a level that feels almost Middle Eastern and luxurious.

“It’s insane. I could live off this,” said one member of today’s cake panel.

The new loaf cake is an autumn-inspired pumpkin cake with lime and cream cheese frosting.

It has a moist, rich crumb and a refreshing hint of lime that complements the warm spices and the pumpkin’s natural sweetness. The surface is sprinkled with sunflower seeds for a light crunch – and the generous thickness leaves nothing to complain about.

Finally, the croissant cake is the most experimental of the three.

Here, Henrik has created a crisp pastry filled with chai and apple jelly, topped with chocolate and a soft chai cream. The result is a cake that’s a little hard to pin down flavor-wise, but still so good you’d order it again without hesitation.

Quality above all

At The Daily Brew, quality remains the red thread. Everything is baked from scratch, and Henrik emphasizes again and again that he will never compromise.

“I only use good ingredients. I’ll never use margarine instead of butter.

It costs what it costs – I’ll just sell more instead,” he says.

Things are busy at the café, but Henrik is lucky to have his mother helping out.

The coming months will bring new seasonal creations, with Christmas cakes debuting on December 1st.

Until then, the small coffee bar beneath the library continues to serve over 200 cups of coffee a day – and with 100 extra seats planned for summer, it looks like The Daily Brew will grow far beyond its original “small passion project” dream.
