Vodka sauce and street food: New food stall opens in Aalborg
It is not every day that you see homemade vodka sauce on the menu at restaurants in Aalborg.
Nevertheless, it is one of the specialities at the new food stall in Friis called “Foldet”.
The stall opened on Saturday and is already serving a wide variety of unique dishes.
The concept was created by Portuguese couple Aachal Pariyar and Srijan Pariyar.

“We’ve never seen anything like it before in Aalborg, so we thought we would give it a try,” the couple says.
A kind of pizza sandwich
Foldet is neither Italian nor Portuguese, nor is it inspired by the cuisine of any particular country.
Instead, Aachal and Srijan have developed the concept themselves, and it can best be described as a kind of pizza sandwich.
The bread, made from homemade pizza dough, is folded around the filling, but that is where the similarities to a classic pizza end.
Neither the fillings nor the flavours necessarily come from traditional Italian cuisine, and the couple have created the recipes themselves.
“We developed the idea ourselves, and we make everything from scratch,” they say.
Among the dishes, you can order a “Potato & Bacon Foldet” with mascarpone, rosemary butter, tender potato slices and crispy bacon – or a “Steak Foldet” with homemade pizza sauce, melted cheese, tender and juicy steak, caramelised onions, fresh chimichurri and freshly grated Parmesan.
Another speciality is the homemade vodka sauce, which you can order on the side or add as an extra.

They already have one stall in Friis
Although Foldet is brand new, the couple are far from new faces at Friis Street Food.
Directly opposite their new stall, they also run “S Churrasco”, which they opened around a year ago.
There, they serve Portuguese-inspired food, and the experience of running their first stall gave them the confidence to try another idea.
“S Churrasco is doing really well for us, so we wanted to open another one,” they say.
This time, however, they wanted to create something completely new.
The result was Foldet, which opened its doors on Saturday – with a concept that the couple hope will give the people of Aalborg a completely new kind of street food to sink their teeth into.
