Young couple takes a big risk: Are opening a new healthy takeaway

Would you like to eat healthier in January but still love takeaway? Then there is good news!
On Friday, a new takeaway place opens at Vestergade 3 in Nørresundby.
Behind it are 23-year-old Morten Nielsen and his wife Noor, who together have chosen to invest their entire savings in the dream of creating healthy, warm takeaway with a focus on quality and good ingredients.
“I have always dreamed of opening my own place, and now the opportunity arose,” says Morten Nielsen.
Bowls with a focus on high quality
At Byens Bowls, you can choose between options such as “The Calm Chicken,” “The Fillet Classic,” “The Fresh Tuna,” or build your own bowl.
In addition, you can buy sandwiches, skyr bowls, and a wide range of beverages.
Most things are homemade, including the dressings, guacamole, and marinades.
The bread comes from Guldbageren in the Vestbyen district, the coffee from Kronen in Aalborg, and the beef fillet is from Grambogård on Funen, which is known for quality meat with a focus on animal welfare.
Furthermore, the ingredients are organic whenever possible.
“It is important to us that the food is of good quality and made from good ingredients,” says Morten Nielsen.
Had a baby in the middle of the renovation
The idea for Byens Bowls arose during a holiday in Croatia a few years ago, where the couple were inspired to open a place where they could sell simple, warm bowls made from good ingredients.
When the opportunity presented itself, they jumped at it.
“I was born and raised in Nørresundby, and we both fell in love with the location here in the pedestrian street,” says Morten Nielsen.
Originally, the place was supposed to open a full year ago, but water damage in the premises delayed the project.
The couple therefore only took over the keys in September – and since then they have been busy.
They had to completely renovate the premises before they could open the place they dreamed of – and in the middle of it all, they became parents to a baby boy.
“We have been busy, but we will make it. And now I am looking forward to opening and seeing how we are received,” says Morten Nielsen.
Neither he nor his wife has any previous experience in the restaurant industry.
Morten Nielsen has until now been self-employed as a haulier, and his wife is studying to become an engineer when she is not on maternity leave.
Nevertheless, they were not in doubt about throwing themselves into the project.
“We love jumping into new things,” he says.
He hopes that Byens Bowls will be a success they can live from for many years to come.
