Bao, burrata and blackberries: Popular brunch just got even better

When you say brunch in Aalborg, you also say Café Spiret.

The popular café on Boulevarden has several times won the title of Best Brunch in Town, and for many people in Aalborg, it has almost become a ritual to tick off dishes on their now-iconic brunch sheet.

But even successful recipes need a refresh once in a while – and the team behind Spiret has now taken that to heart.

This autumn and winter, they’ve given the menu a loving makeover with new favorites, seasonal flavors, and a few much-missed classics that many guests will surely be happy to see return.

“We always try to keep the dishes people love, but at the same time give the menu some fresh energy.

We want to follow the seasons and constantly surprise – without compromising on what people associate with Spiret,” says Mads Brix, owner of Café Spiret.

The croissant steals the spotlight

The new croissant has already become a talking point among brunch guests – and for good reason.

The warm, crispy pastry is topped with truffle mayo, Serrano ham, grated Fyrtårn cheese, and garden cress, and is described by Mads Brix himself as “the crown jewel” of the autumn menu.

“It just works. There’s something about the combination of crispy, salty, and that warm truffle flavor that people love.

We actually think it’ll end up being one of the five most chosen dishes – and then it’ll probably be hard to take it off the menu again,” he says with a laugh.

Bao, burrata and blackberries

But the croissant is facing some tough competition.

Another newcomer is the soft bao filled with marinated pork, pickled vegetables, peanuts, and puffed pork rinds – an Asian-inspired bite that, according to the chef, is the authentic traditional bao.

On the greener side, Spiret has added fried cauliflower with kimchi mayo and a fresh squeeze of lime, as well as tomato with mini burrata and truffle balsamico – two dishes that have also quickly made it onto the favorites list.

New on the menu at Café Spiret:

  • Croissant
  • Bao
  • Fried cauliflower
  • Tomato with mini burrata
  • Blackberry skyr (back on the menu)
  • Gammel Knas cheese (back on the menu)
  • Tiramisu trifle

And then there are the sweet comebacks.

The popular blackberry skyr with granola and fresh blackberries is back on the menu, just like the cheese Gammel Knas, which has returned to the brunch board after the national cheese shortage, when no one could get hold of the famous cheese.

“Blackberries and tiramisu trifle just fit perfectly with autumn and winter, we think. It adds a bit more coziness to the season,” says Mads.

Still the brunch Aalborg locals know and love

Even though there are new items on the menu, it’s still the same well-crafted brunch experience that greets guests on Boulevarden: quality ingredients, balanced dishes, and a format where you build your own brunch with three, five, or six small servings.

“We now have some dishes that can never go off the menu. Chicken sticks, Croque Monsieur – and maybe now also the croissant.

At some point, it’ll probably be hard to find something to replace,” says Mads Brix.

So whether you’re into crispy bao, creamy burrata, or classic brunch with a twist, Spiret is ready with a new menu that has… well, a bit of everything.
