Classic dessert reinvented: Strawberry cake in new forms at popular café

Summer is just around the corner, and this weekend we can look forward to soaring temperatures.

And what could be better on a beautifully set summer table than a delicious strawberry tart?

The strawberry season is almost here, and we have already mentioned that one of the city’s micro-bakeries is ready with the legendary cake made with Danish strawberries.

Now another bakery is joining the celebration.

And this time, it is bringing back a favourite from the past few years—a version that proved extremely popular.

French inspired?

This year, Fru Søgaard has once again experimented with a rather unusual shape for its strawberry tart, possibly inspired by the French éclair.

It is not the first time Fru Søgaard has drawn inspiration from French pastry traditions, and here they appear to have combined that influence with a classic Danish favourite.

The strawberry tart is elongated and beautifully decorated with Danish strawberries, a thick layer of vanilla cream, and a sprinkling of pistachios.

The vanilla cream is speckled with vanilla seeds like a Dalmatian’s coat, while the strawberries are perfectly glazed and sweet in just the right way.

The tart itself is built on a base of marzipan cake and chocolate, giving the soft pastry a delightful chocolatey crunch.

We are particularly fond of the new elongated shape that Fru Søgaard has chosen.

The smaller strawberry tarts are often made in a round format, which can be difficult to eat without the beautiful pastry collapsing completely.

That is not a problem with this version, which stays intact and elegant from the first bite to the last.

The price is DKK 55 when dining in and DKK 45 for takeaway.
