A tribute: Famous Aalborg restaurant has created the perfect hot chocolate

At Struktur, they have always been deeply focused on flavor, quality, and craftsmanship – but this winter is something special.

For the first time, café guests can sit inside, warm and cozy, while looking directly out onto the ice rink at C.W. Obels Plads, all while enjoying a cup of Struktur’s newly crafted, specially developed hot chocolate.

A striking contrast to previous years, when the café faced the bustling pedestrian street of Vesterå, Struktur’s new location brings a completely different pace and atmosphere. The view of twinkling Christmas lights and gliding skaters has inspired Dennis Juhl and his team to go all in on festive indulgence.

“This is our first Christmas at the new location, and we wanted to create something that matches the atmosphere of the square,” Dennis Juhl tells MigogAalborg.

Carefully balanced


For those familiar with Struktur and their concept, it’s probably no surprise that this hot chocolate isn’t called Matilde for nothing. The team conducted numerous tests to find the perfect cocoa.

The result is now a luxurious yet easy-to-drink hot chocolate made from smooth, fruity 55% Valrhona chocolate. Instead of white sugar, Struktur uses a light syrup that adds caramelized depth, while a touch of sea salt elevates the flavor.

The ratio of whole milk to semi-skimmed milk is carefully calibrated to hit the golden middle: rich in taste but not heavy.

The topping is perhaps the most indulgent part. A simple whipped cream wouldn’t suffice. Here, they’ve chosen a light, slightly sweetened crème anglaise made with Bourbon Grand Cru vanilla – a deliberate choice over classic whipped cream.

“The cream is almost a dessert in itself,” says Dennis Juhl with a laugh. Home-baked cookies naturally accompany the hot chocolate.

Countless tests behind it


Getting there wasn’t without experimentation:

“We made versions so intense you could only manage two sips,” he says.
“And milk-based versions so heavy that you’d feel nauseous if you forced yourself through a cup. It had to be drinkable for both young and old.”

After sampling it ourselves, we can honestly say it’s probably the best cup of hot chocolate we’ve ever tasted.

He’s not exaggerating when he says it’s like a dessert in itself – that’s exactly how it feels and tastes. The cocoa has an intense, sweet chocolate flavor, and combined with the soft, creamy topping, the experience is complete.

Mulled wine with a gastronomic touch


It’s not just the hot chocolate that’s new this year. With a view of the ice rink and the festive mood outside, Struktur has also developed both a white and a red mulled wine, crafted with the same gastronomic attention to detail as the rest of the menu.

The spices, acidity, and sweetness are perfectly balanced to evoke a warm, full-bodied winter feeling without being heavy. The mulled wine is on the stronger side alcohol-wise, so you get real value for money – perfect for warming up after a few laps on the ice, though perhaps not before if you want to stay elegant out there.

Hot chocolate is priced at 65 DKK, while the mulled wine costs 89 DKK.
